Fermentation. And, luckily, Whitney Burnside has a great appreciation for both.

In last week's PBJ print edition, we featured a bevy of inventors who've made their name in Portland's tight circles. We also ran our PBJ Interview with 10 Barrel Brewing's Burnside, who's far younger (28) than the experienced hands we featured but no less inventive.

If all goes well, she'll soon roll out a recipe that's aged in merlot barrels.
